Alfredo Sauce w/sundried tomatoes
1 1/4 cups half & half
2 tbls. Butter
2 tbls. olive oil
1 tsp. garlic
1/4 cup sweet peppers & onion
Handful of fresh spinach, chopped
2 tbls. cooked bacon
1/2 cup Parmesan cheese, grated
Salt & pepper to taste
Heat the olive oil in a pan on medium heat.
Add the fresh spinach and sundried tomatoes.
Cook until heated through (2-3 min).
Pour in the half & half and the butter.
Cook on medium-low heat until it boils, stir frequently.
When it starts to thicken, add the chicken, bacon and Parmesan cheese. Once the sauce has fully thickened (8-10 min), add salt and pepper to taste and enjoy! I put the sauce through a flood processor to make it extra smooth. If you choose to do this step, please be careful. Make sure you have room for the steam to escape. The sauce will also thicken more once it's poured over the pasta.
